Tasting Australia Masterclass - from the reef

First Nations foods are increasingly gaining popularity in the mainstream and are rapidly being adopted into our diets. These plants and animals represent a plethora of foods that are pre-adapted to our environmental landscape and have been sustaining life in the Torres Strait for thousands of years. Yet it is only in recent years that these foods have been more widely adopted and integrated into modern First Nations cuisine.

Nornie Bero is from the Meriam People of Mer Island in the Torres Strait and is the Founder and CEO of Mabu Mabu. Nornie's food philosophy is all about generosity and flavour, and she has been championing first nations ingredients throughout her 25 year career as a professional chef. Robert Oliver is the executive director and show host of SBS food favourite Pacific Island Food Revolution project. He grew up in Fiji and is a champion of Pacific cuisine. His book Me’a Kai: The Food and Flavours of the South Pacific won Best Cookbook in the World 2010 Gourmand Awards. He followed this with Mea’ai Samoa: Recipe and Stories from the Heart.

Joining Nornie & Robert as facilitator will be Professor Andy Lowe, director of the Environment Institute at the University of Adelaide. Through his work, Andy tackles questions about how the food we eat is grown, consumed, and how it can be protected to ensure a sustainable food future.
