Recipe of the week: Bruschetta!

The pandemic has meant we have all been spending more time at home that usual. For me, this means more time to try out new recipes and exciting dishes! Today’s recipe is not one of those. It is an old favourite, as easy, cheap and quick as it is tasty!

Ingredients:

4  vine ripened tomatoes (is even better if you can find dark green tomatoes) – diced into small cubes

4 fresh basil leaves chopped

2 cloves of garlic, diced

1 small red onion (optional, I leave this out)

1 teaspoon of balsamic vinegar

1 teaspoon of olive oil

100 g of Greek feta, crumbled

Bread of your choosing or dry biscuit

Plenty of salt and pepper

Instructions:

Basically, mix it all together and place on top of a freshly grilled piece of bread or biscuit!

This is a healthy and easy snack - or if you want it can take the place of a main meal by adding some chicken, ham or other meat on to the bread as well.

I often have it when I am craving something substantial but don’t want to ruin my appetite for a proper dinner. Give it a go!
