    Broad Research Interest: Charactersiation and Optimistion of Wine Yeast and Bacteria.

    Specific Project Areas: Definition of the qualitative, quantitative and temporal requirement by yeast for assimilable nitrogen to guide development of 'nitrogen efficient' wine yeast

    High-throughput systems for identification of genes influencing yeast fermentation performance and wine composition.

    Use of adaptive evolution and other non-recombinant approaches to generate wine yeast with improved fermentation capabilities.

    Definition of the influence of yeast strain on colour development and stability in red wine fermentation.

    Determination of the genetic basis for novel sugar utilisation attributes of brewing yeast strains and their exploitation in strain improvement.

    Isolation and characterisation of genes from lactic acid bacteria encoding glycosidase and esterase enzymes.

    Modelling of industrial wine fermentations on in laboratory an don a pilot scale.
